Fun week ahead!

Happy Monday to you all!

I'm finding it hard to get going this Monday but it's going to be a fun upcoming week/weekend so I have that to look forward to! I STILL haven't heard back from any jobs, but I did get chatting with some people at CorePower Yoga and on Wednesday I am going to chat with the regional manager and possibly (hopefully) set up an audition with them! And Andy's parents will be here Thursday through Sunday! So excited to have some fun with them!

As for our past week/weekend, it was great! I tagged along with Andy and his friend to the casino on Friday night...my first casino experience. None of us won anything though :( but I did learn how to play blackjack! Saturday was spent at the beach in the lovely 80 degree weather! I even got a little color :) But I don't recommend swimming in the Pacific Ocean in January without a wet suit....we did but I just ended up with one heck of a numb body! Sunday we took a nice long motorcycle drive out to Del Mar beach (thanks Emily for telling me about it!) and it was BEAUTIFUL, definitely going back there.

I tried making homemade kale chips last week...definitely did not work, just made our apartment stink. But I am determined to get that recipe down! Andy also had requested that I try making red velvet cake balls that he could bring into work. Those turned out nicely! I just ran out of chocolate so I need to finish the chocolate dip on them today :)

Week Recap

Hi everyone!! It's a gloomy and rainy day here in SoCal. But I am back and ready to report about another week in the San Diego Kurkowski household!

To be honest, I don't really have anything too exciting. Andy worked nights last week which was definitely different than the usual schedule we are used to! I still haven't heard back about any job opportunities, I am starting to think I should look around for some possibly volunteering things I could do. We didn't do anything to exciting this weekend either, ran errands, went to a movie and relaxed at home! Having a chill weekend was just what we needed. We ate at a sketchy Chinese food place on Saturday that sort of messed up our tummys which was no fun at all :( 

I am proud to announce I made my first real 100% by scratch meal on Sunday! AND IT TURNED OUT GREAT! Slowly but surely I am determined to be comfortable with cooking and be good at it too :) A big thanks to my momma for the recipe too!

We don't have too much planned for the week, but next week Andy's parents are coming to town for a few days and it'll be nice to show them around! And the weekend after that my Dad will be here, so many visitors! Fun!

Happy Monday

Hey all, Happy MLK day!...hopefully some of you get to enjoy a day off of work/school :)

Andy doesn't have to work today so he's enjoying his day off! It's his first week of working "evening" shifts too, so basically 3pm-10/11pm. That's definitely a lot different than 6am-2pm! It'll be nice to have a hubby to wake up to this week! As for me, no work yet. I did get an interview with Target. They are interviewing a lot of people but I think they'll offer me the job (they'll let me know in 5-7days). At this point, I may have to take the job because it might be my only hope for work, even though Target is NOT my ideal job. I did apply to work in the Tennis Pro Shop at a tennis country club and I am hoping and praying they get back to me soon with good news! Also, I am looking into starting online classes soon...I'm so close to my bachelors degree that I just want to finish before I've been out of school too long! Take that everyone who thought I wouldn't back to school or wouldn't want to! ;)

We did a little exploring this weekend! We drove out to Poway (town about 30mi from us) and hiked the Iron Mountain Trail to the top of the mountain. It was about a 6 mile hike, not too hard/not too easy. The views were amazing even when it was a cloudy day! It was a bit of a dusty/rocky trail that left our clothes pretty grimy but it was worth it. Also, as some of you may know, I have hyperflexible knees & ankles which make hiking very interesting. Let's just say my ankle and knees gave out quite a few times but I only took 1 major spill :) We are going to try and do at least one or more hikes a month while we're here!


One more quick note, we FINALLY managed to sell Andy's car last week! It's nice to have a good chunk of money back in the bank :) I hope you all have a wonderful week!

Wife Skills

Hey everybody, here is a little update from sunny San Diego:

First off, while cleaning out the pockets of his uniform last night, Andy found a USED scalpel. So nasty but I guess that's part of being married to a lab tech! Just hoping that never happens again :)

I wish I could report good news about my job search but still nothing. I spent a lot of time last week just driving around to all sorts of places to see if they were hiring. Not many are hiring, but I'm hoping at least one of the places I've left my resume will bring me some good luck. I did apply to 4 different YMCA jobs, some including yoga instruction and some including other duties. I am hoping and praying that the YMCA comes through for me, what a fun place to work! And it could be a great starting point for teaching yoga!

In other news, my wife skills this past week weren't the best. I attempted to make homemade mac&cheese...which did not turn out well at all. And I ruined a whole set of our bed sheets and a body pillow with mold (a few weeks ago I put slightly damp sheets in a storage bin which resulted in all the mold). So stupid on my part but hey, I'm still learning! I'm lucky to have a patient and loving hubby who puts up with me :)

One more big story: With a little coaxing from Andy, I agreed to ride the motorcycle on the highway this weekend! Weirdly I felt safer cruising on the highway than driving in the city with all the traffic. We drove out to La Jolla (very upscale fancy area w/ shops and food and beaches) and it was a beautiful day!
